Need to up your taco game?
Mexican Caviar is the answer!
Sometimes known as Cowboy Caviar or Texas Caviar, this cross between a salad and a salsa is the perfect dish to add to taco night. Or nacho night. Sometimes we do both in the same week!
I first ran across this recipe in a Weight Watchers cookbook and now make it on the regular. Even with much of the ingredients being canned, adding the fresh red pepper, jalapeño and lime juice make this salad taste fresh. The jalapeño isn’t too spicy but feel free to omit. And anything with cumin is good in my book!
If you can’t find Mexi-Corn, feel free to use a substitution. Basically, you’re looking for whole-kernel corn with peppers mixed in. I found a 15 oz. can of southwestern style corn the last time I made this. This recipe is forgiving, so just dump it all in! More veggies, more better!
Depending on seasonality, 3/4 cup may be one whole red pepper or it may just be a half. Just dice up the pepper and throw it in! Also, green pepper or any other color pepper may be substituted. Again, more veggies, more better!
This recipe holds up pretty well, so feel free to make up to 1 day in advance. There’s no dairy so it does well at BBQs and potlucks. I have served this as a side dish, added to tacos and nachos, served as an appetizer with tortilla chips and sometimes I just add chunks of rotisserie chicken and call it lunch!
Mexican Caviar
A quick and easy appetizer, side dish or accompaniment to tacos or nachos!
Ingredients
- 11 oz. Mexi-corn, drained
- 12 oz black beans, drained and rinsed
- 3/4 cup red bell pepper, diced
- 2 Tbsp jalapeno pepper, seeds removed, diced
- 2 Tbsp freshly squeezed lime juice
- 1 tsp olive oil
- 1/2 tsp ground cumin
- salt & pepper to taste
Instructions

Drain the Mexi-corn and add to a large mixing bowl.

Drain and rinse the black beans and add to large mixing bowl.

Dice red pepper and add to bowl. De-seed and dice jalapeno and add to bowl.

Add fresh lime juice, olive oil, cumin and salt and pepper to taste.

Mix all ingredients thoroughly and serve.
