Salsa Chicken

The easiest way to make flavorful chicken for tacos,
nachos, salads and more!

I know… the photo isn’t the most appetizing, but it tastes so much better than it looks!  Salsa Chicken is incredibly easy and versatile.  Dump three ingredients into a crockpot and come back a few hours later for delicious topping or filling to just about anything you can think of.  Tacos, nachos, quesadillas, sandwiches, sliders, salads, burritos, enchiladas… The possibilities are endless!

I’m in my thirties, as are many of my friends, which seems to ripe with life changes, both good and bad. We’re aging into a category where we become caretakers for both young and old. Sometimes the change is joyous, like welcoming a new baby, or moving into a new home!

Sometimes the change is devastating, like the death of a parent or a divorce. Whatever the situation, dropping off a home-cooked meal is often appreciated and this is a good one to keep in mind. 

When I drop off a meal, I like to think a little outside the box. Recently, I brought over Salsa Chicken along with flour tortillas, tortilla chips, shredded lettuce and shredded cheese, sour cream and my Mexican Caviar and it was VERY well received!  Some made nachos, some made tacos, some made quesadillas, all were happy it wasn’t another lasagna or casserole! 

I think the taco seasoning adds just a bit more flavor than only using salsa, but in a pinch, pouring salsa over chicken breasts/tenders will yield almost as delicious results.  I’m also a big fan of making my own taco seasoning – its really easy, you know exactly what’s in it.  Check out my recipe for homemade taco seasoning.

This is also a great meal prep trick as you can cook the chicken while away for the day  and come home to taco night! 

Salsa Chicken

Easy, versatile and flavorful shredded chicken to use for almost anything!

Ingredients

  • 4 ea chicken breasts boneless, skinless
  • 1 jar salsa
  • 1 TBS Taco Seasoning

Instructions

  1. Add chicken breasts to crock pot.

  2. Sprinkle taco seasoning over top of chicken then cover chicken breasts with taco seasoning. 

  3. Cook on low for 6 hours.  After 6 hours, shred chicken using two forks and use salsa to thoroughly coat all chicken.

  4. Keep chicken warm by setting slow cooker to warm. 

Recipe Notes

  1. Technically, frozen chicken breasts should be thawed before adding to crock pot.  If you use frozen chicken breasts, the chicken may be held in the temperature danger zone for too long which could lead to illness. However, have I used frozen and lived to tell about it, yep! 
  2. I used 4 chicken breasts per jar of salsa.  You can easily adjust based on desired quantity.  Feel free to use chicken tenders as well. 

Salsa Chicken would also be delicious as a sub in my Carnitas Rice Bowl or as a sub for the pre-cooked chicken in my Green Chile Chicken Enchiladas
