Delicious on my Honeymoon Salad
but also great on chicken or just about anything!
This vinaigrette goes great on my Honeymoon Salad and would be good on just about anything! The honey adds a nice note of sweetness while the jalapeño adds a subtle heat. I can’t think of a whole lot this dressing wouldn’t be good on!
Making your own dressing is quick and easy. It really adds to the freshness and when you make it yourself, you know exactly what’s in it! I recommend storing in an air-tight container, like a mason jar, in the refrigerator and using it on salad, chicken, etc.
Cilantro Lime Vinaigrette
Ingredients
- 1/4 cup cilantro, roughly chopped stems removed
- 1/4 cup fresh lime juice
- 1 clove garlic, minced
- 3/4 tsp fresh ginger, grated
- 1 medium jalapeño, minced de-seeded and de-ribbed
- 1/3 cup honey
- 2 tsp balsamic vinegar
- 1/2 cup extra virgin olive oil
- salt and pepper to taste
Instructions

Wash all produce. Pat dry the cilantro and remove stems. Roughly chop cilantro leaves.

Mince the jalapeño, removing the seeds and ribs (unless you'd like the dressing to be spicy).

Using a spoon, peel the ginger, then grate using a microplane or grater. Peel and mince the garlic clove.

Add cilantro, lime juice, garlic, ginger and jalapeño to a blender or food processor and blend/process until ingredients are incorporated.

Add honey and balsamic vinegar and blend/process some more.

Add salt and while dressing is blending/processing, add olive oil slowly.

Continue to blend/process until all ingredients are incorporated. There will be small, cilantro flecks in the dressing.
