The recipe that inspired the name of the blog!

Crunchy tortilla strips, creamy avocado, asadero cheese and a cilantro lime vinaigrette make this salad great! 

My husband and I didn’t want to go to Mexico for our honeymoon.  We’d been a few times already, I would be going a few months after the wedding for work; we just felt we were Mexico’d out. Of course, we could book our own trip, but this trip was important! 

This was our honeymoon after all! We should go with a travel agent when booking our honeymoon and this one worked out of the bridal shop I bought my dress at, so she has to be qualified and have great connections, right?!? So, where did we end up?

The resort wasn’t quite as advertised; “not the best beach” actually meant “no beach at the resort”, and the honeymoon upgrade we shelled out for was literally a tote bag! Of course we still had a great time celebrating, made some great memories and found this salad! 

I had a variation of this salad on our honeymoon and loved it! So much so, I tried to recreate it for a girls’ night I hosted. I accidentally left the salad spinner a little too close to the oven vent, melting a huge hole in my salad spinner and charring the lettuce. The salad was a bust (luckily the range wasn’t damaged), but came up with a good name for this blog! 

When I had this salad in Mexico, it was a first course, but this version has been bulked up a bit and could easily be an entree salad.

Since this salad is so simple to put together, I highly recommend making the Cilantro Lime Vinaigrette.  Homemade dressings are so good and so easy! You know what’s in it and just taste fresh!

Honeymoon Salad with Cilantro Lime Vinaigrette

Think of asadero cheese as “Mexican mozzarella” as it’s a semi-firm cheese.  It has a light, fresh taste with just a bit of tang.  If you have leftover asadero cheese, throw it in a quesadilla as it melts beautifully! 

Honeymoon Salad with Cilantro Lime Dressing

Ingredients

  • Romaine Lettuce, chopped
  • Asadero Cheese, cubed in 1/2" pieces
  • Grape Tomatoes, halved
  • Tortilla Strips
  • Cilantro Lime Dressing

Instructions

  1. Make dressing if not already prepared.

  2. Wash all produce.

  3. Cut romaine lettuce and dry in salad spinner. Be VERY CAREFUL as to where you place your salad spinner as you chop the rest of your ingredients. 

  4. Add romaine lettuce to a serving bowl. Top with cheese, tomatoes and avocados, adding the tortilla strips last.

  5. Drizzle on salad dressing and enjoy! 

Recipe Notes

I left off specific recipe ingredients because, well, it's a salad!  Put however much lettuce you want in your bowl.  Add a decent amount of toppings and enough dressing to fit your fancy!
