Fresh pineapple salsa - good as an appetizer and
especially good in my Carnitas Rice Bowl!
This fresh pineapple salsa is good as an appetizer on it’s own, but it’s REALLY good on my Carnitas Rice Bowl!
Fresh pineapple salsa is so quick and easy to make – just 6 ingredients and a pinch of salt! Fresh pineapple is a must for this recipe – canned just tastes different and doesn’t hold up at all if you don’t eat this salsa immediately.
While this salsa doesn’t last forever, this is certainly something you can make earlier in the day or even the day before to make getting dinner on the table easier.
There’s a bit of a debate in our house on whether this a relish or a salsa. Relishes typically involve some type of cooking ingredients together and since this is just a mixture of cut fruits and vegetables, I think it’s a salsa. It could also be a regional thing – we live in Colorado and I read somewhere, as a state, we eat more salsa than ketchup?!? (source: somewhere in the depths of the interwebs….)
The littles that we feed may gobble this up, or may find there are too many flavors or ingredients for their preference. Since this recipe calls for half the pineapple, cut the rest of the pineapple up into slightly larger chunks for snacking or an alternate recipe. Also, I’ve made this without the jalapeno which may be prefered by your little if they’re keen on this salsa.
Pineapple Salsa
Great as an appetizer or snack and amazing in my Carnitas Rice Bowl!
Ingredients
- 1/2 ea Pineapple, fresh, finely diced
- 1/2 ea Red Pepper, fresh, finely diced
- 1/4 cup Red Onion, finely diced
- 2 TBS Cilantro, finely chopped
- 1.5 TBD Lime Juice, fresh (juice from one lime)
- pinch Sea Salt
Instructions

Finely dice pineapple, red pepper and red onion. Finely mince the cilantro.

Mix pineapple, red pepper, red onion and cilantro together in a bowl.

Squeeze the lime juice into the bowl, sprinkle with salt and mix until all ingredients are incorporated.
Recipe Notes
Dicing the ingredients the same size helps balance flavors and makes it easy to eat.
