Weekly Meal Plan – January 1st, 2024!

Here’s what we’re having for dinner this week! I’m typically feeding my family of 3, including my husband and 8-year-old son. I’m gluten-free and we are all picky eaters to some extent. We usually eat family-friendly meals and there is always room for tacos on the menu!

While we typically do fondue on NYE, we ended up meeting friends out for pizza! Both families are recovering from being sick and neither up for hosting so kept the germs out of either house and let someone else do the cooking! Our service was terrible, food just meh, but we still had a great time! After dinner, we drove around caravan-style to see some of the notable Christmas Light houses in our area and called it a night around 9p! 

Monday: Hoppin’ John (Southern black eyed pea stew) with cornbread, gluten-free Cheddar Bay Biscuits a la Red Lobster! It’s considered lucky to have black-eyed peas on New Year’s Day so we have Hoppin’ John, a southern stew with ham, veggies and black eyed peas, served over rice. Cornbread is also lucky but went with the box mix of Red Lobster’s Gluten-Free Cheddar Bay Biscuits instead! If you’ve never had them, you’re missing out! Hoppin’ John is naturally gluten-free, so just adding a batch of GF biscuits makes this meal gluten-friendly and family-friendly!

Tuesday: Taco Tuesday, no sports this week so doing hard shell tacos, guac, and refried beans – Alex’s favorite! Another naturally gluten-free meal!

Wednesday: Alex is at Gramma’s house all week as he’s still on Winter Break, TBD if he’ll stay for dinner on Wednesday night like he typically does…

Thursday: Egg Roll in a bowl – can you believe we’ve never actually tried this?!!? So many good reviews, it’s time to give it a whirl! Just a few simple tweaks needed to make this one gluten-friendly!

Friday: IDKY (Alex informed me that it’s cooler to say IDKY rather than just IDK, so…) I Don’t Know Yet!

Saturday: Burgers – this is the 10th anniversary of my FIL’s passing, and he loved a good burger! So we’ll have burgers in his honor on Saturday night! Wow! I can’t believe he’s been gone 10 years, doesn’t seem real.

It’s a weird week with my husband and I working but no school or sports due to Winter Break. Luckily Camp Gramma and Papa to the rescue and they have a fun week lined up with field trips and activities. Have a delicious week!
