Eat a Peach Sandwich

White cheddar cheese, apple butter and juicy peaches make this grilled sandwich deliciously comfort food craveable.

Ingredients

  • 2 slices sandwich bread
  • 2 tsp butter or margarine
  • 2 tsp apple butter
  • 4 slices Vermont white cheddar cheese
  • 1/2 peach, fresh
  • non-stick cooking spray

Instructions

  1. Thinly slice cheddar cheese and peaches.  Thick slices will make it difficult for the cheese to melt.

  2. Spread butter evenly on the outside side of both slices of sandwich bread. 

  3. Spread apple butter evenly on the inside side of both slices of sandwich bread (I recommend doing this on a cutting board, otherwise you'll get butter on your counter!)

  4. Place sliced cheese slices on one slice of bread, directly on top of apple butter. Place sliced peaches on the other slice of bread, directly on top of the apple butter.

  5. Spray griddle or pan with cooking spray and heat to medium-high heat. Place one slice of bread, butter side down. Top with the other slice of bread, butter side up to make the sandwich.

  6. Toast sandwich until bread is golden brown and cheese is starting to melt. Flip to toast the other side. 

  7. Remove from heat when sandwich bread is golden brown and cheese has melted. Enjoy!

Recipe Notes

If sandwich bread is thick, you can make sandwich open-faced, and microwave the slice of bread with cheese for approx. 15-20 seconds to melt the cheese.  Assuming you have a good toast on the bread already, bread will remain crisp and not get soggy.
